This beautiful gin is an homage to the inimitable dancehall days of 1920s Manila and its crown jewel, the legendary Santa Ana Cabaret, once the largest in the world. Set amidst the splendour of the Philippine Art Deco Movement, Santa Ana Cabaret was a musical playground for Manileños of the time.
For Santa Ana Gin, they started with a few classic gin staples — Juniper, Coriander, Lemon, Bitter Orange, Angelica Root and Orris Root — and added the perfume-like qualities of Ylang-Ylang, Alpinia and Fennel alongside the sweet citrus notes of Calamansi and Dalandan.
Santa Ana Gin is made via partial-vacuum distillation, a technique mastered in the Charente region of France. This technique enables the ability to extract a concentration of botanical aromas without degradation by heat.
The subtlest of perfumes are extracted with vacuum distillation, which strengthen and become more complex towards the end of distillation. The result of the process is a fragrant, delicious gin utilising even the most sensitive of botanicals, such as Ylang-Ylang or Calamansi.

The combination of delicate floral top notes and a fresh tropical citrus palate complements the seven traditional botanicals in our recipe, evoking the nostalgia of a smoky tropical champagne room, big band swing and the glamour and decadence of days gone by.
