DON PAPA SHERRY CASK
Don Papa Rum is seen here through the lens of four different sherry casks, resulting in a deep, rich and powerful spirit that’s packed with dried fruit, cacao and oak.
The primary sugarcane variety in the Philippines is the ancient caña morada, or purple cane. This is crushed in ancient sugar mills to separate juices from fibres. The juice is then processed to produce crystallised sugar, muscovado and the molasses known here as the Black Gold.
After fermentation, and continuous distillation in column stills, the spirit is cut with spring water from Mount Kanlaon before being filled into ex-bourbon barrels.
After four years this spirit is transferred to four different sherry-finished barrels, namely Pedro Ximénez, Palo Cortado, Fino and Cream, each contributing different flavours over the course of an additional 18 months.

Dry and intensely spicy with rich fruitcake, dark toffee, smooth molasses and cigar smoke.
Expansive and full-bodied, with notes of dark sherry, Arabica coffee, deep oak tones and a backdrop of sweeter spiced liquorice, cinnamon and vanilla.
Incredible length, with spices, sweet sherry, and notes of toasted oak.
