FORTALEZA AÑEJO
Destilería Fortaleza’s finest expression – a handcrafted añejo made with 100% stone crushed Blue Weber agave and aged for a minimum of 18 months in charred American white oak barrels, from the legendary tequila-making Sauza family.
This is a superb, perfectly aged añejo with deep, rich and complex notes -exceptionally satisfying and a treat in every sense.
Fortaleza harvest mature agave plants all year round from the surrounding Tequila Valley. It takes around 4 hours to load the agave piñas by hand into the huge 15-ton capacity brick oven with its metre-thick walls. The piñas are then slowly steam-cooked for 36 hours, powered by the distillery’s 115-year-old vintage boiler.
The cooked agave are then unloaded by hand and crushed by the traditional tahona stone mill to release the pulp and juices. This is then rinsed to separate the pulp from the fibres, producing the sweet agave juices known as mosto.
After a 5-day fermentation process, the mosto is transferred to wooden vats, ready when the fermented must reaches around 5% ABV.
The fermented mosto muerto is finally double-distilled in Fortaleza’s handmade vintage copper stills, before being filtered and transferred to rest in charred American oak barrels for a minimum of 18 months and up to 3 years.
100% Blue Weber Agave, natural spring water from the Tequila Valley, rested in charred American white oak barrels.
Rich and full-bodied, this is an exceptionally satisfying añejo which is designed to be savoured and sipped.
