Fortaleza Still Strength

FORTALEZA BLANCO
STILL STRENGTH

For many years the only way to sample this blanco was in the Fortaleza Distillery itself. We are proud to be able to present this unaged tequila in its purest form.

Bottled at full strength as it comes off the copper pot still at 46% abv, this is a slightly brighter more rustic expression of its equally excellent sibling, Fortaleza Blanco.

PRODUCTION

Fortaleza harvest mature agave plants all year round. The traditional brick oven has a 15 ton capacity, which takes around 4 hours to hand-load with the agave piñas before being slow steam-cooked for 36 hours, powered by a vintage boiler which dates back to 1903.

The agave is then unloaded by hand and stone-crushed by the tahona mill for 5 hours to release the pulp and juices. The agave is then rinsed to separate the pulp from the fibres, producing the sweet agave nectar called mosto.

The mosto is then transferred to wooden vats for fermentation, which takes around 5 days, or when the fermented must reaches around 5% alcohol by volume.

The fermented mosto muerto is finally double-distilled in Distelleria Fortaleza’s handmade vintage copper stills, before being filtered and then transferred to steel tanks and bottled at still strength.
