Over 100 years after Kentucky Owl™ Distillery was closed down by the Federal Government, a casualty of Prohibition, the great-great-grandson of its founder C.M. Dedman has realised his family’s dream to revive its bourbon heritage.
Nowadays, ‘The Wise Man’s™ Bourbon’ sources a wide variety of whiskeys featuring a mix of different grains and innovative barrel ageing to create its bold and distinctive selection of single-batch bourbons.
Specialising in limited releases, Kentucky Owl is blended and bottled at barrel strength, and is uncut and non-chill filtered. No two batches are ever the same, and when they’re gone, they’re gone. The exception is Kentucky Owl Distillery’s Confiscated™, bottled at 48.2% ABV to make it more accessible, and more consistently available.
Charles Mortimer Dedman established Kentucky Owl on the banks of the Kentucky River in 1879, and for 37 years it flourished, until the Federal Government confiscated its stocks in 1916 ahead of Prohibition. While the warehouse containing all of this whiskey suspiciously burned down soon afterwards, it’s thought that the stock likely found its way into the speakeasies of Chicago.
Today, Kentucky Owl flies again, and the Master Blender proudly shares the bourbon from the Dedman family created over 100 years ago. The modern day incarnation of this historic name in US distilling celebrates the best of the country’s whiskey through its limited releases, as well as its ongoing Confiscated bourbon.

The boldest and most robust Kentucky Owl whiskey Dixon Dedman had created – a blend of Kentucky straight bourbons aged between 6 and 15 years old.
Nose: Apple and cinnamon roll, with maple candy, vanilla, and rich oak aromas.
Palate: Rich honey and caramel lifted by citrus and hints of tea.
Finish: Spicy and peppery.

Kentucky Owl blends some of its oldest, oakiest and most precious barrels with more youthful, fruity and spice-driven selections.
Nose: Opens with honey, nutmeg, old seasoned oak, leather and spiced pear.
Palate: Sweet notes of caramel, toffee and vanilla, with allspice, toasted marshmallow, spiced apple cider, and cayenne pepper.
Finish: Ongoing spice with a lingering sweetness.
