An 1820s-style Collins, the Philip Duff way.
Ingredients
50ml Old Duff Genever
25ml freshly squeezed lemon juice
25ml sugar syrup
sparkling water
Method
Shake first three ingredients hard with ice and strain into an ice-filled long glass. Top with cold sparkling water and garnish with a lemon slice.
