Mezcal Madre, with its beautifully balanced flavour profile, restrained smokiness and traditional production methods, is perfectly suited for seasoned mezcal drinkers and newcomers alike. It embodies the spirit of Oaxaca, staying true to time-honoured production methods while looking forward to the sustainable future of the category.

PRODUCTION

Jose Garcia Morales and his family draw on ancient methods to produce Mezcal Madre. Members of the family harvest the agave plants, while Jose’s mother blesses them with sage before they’re cooked in earthen pits over hot stones.

After crushing with a traditional stone grinding wheel, and fermentation with natural yeast in open-air wooden containers, the juice is distilled in a copper still over wood fires.

The final product is then poured into handmade bottles made from recycled glass, with each bottle hand numbered.

Meanwhile, Jose’s wife oversees the planting of new agave plants, ensuring this spirit’s sustainability. Mezcal Madre is made from a blend of Espadin and Cuishe agave varieties, each bringing their own distinct flavours and characteristics.
